Is upcycled food sustainable? Most people know the cashew for its nut. But what happens to the much larger fruit attached to it after harvest? That question leads to a very different side of the cashew story. The part we casually call the cashew apple, or peduncle, makes up roughly 90% of the cashew's weight, while the nut accounts for about 10%. In Northeast Brazil, this fleshy part can be eaten fresh or processed into juice, pulp, cajuína, sweets, preserves and other produc
