How to Make a High-Fibre Kofta Wrap

Step 1: Cook the veggie kofta

Arrange the kofta in a single layer in an air fryer or on an oven tray. Cook according to the instructions on the product packaging until heated through and lightly browned. For air-fryer preparation, follow the current pack instructions for the recommended temperature and cooking time.

Allow the kofta to rest briefly before slicing it into strips, if suitable for the product's shape.

Step 2: Saute the vegetables

Heat the oil in a pan over medium-high heat. Add the sliced onion and capsicum and sauté for 1–2 minutes, stirring occasionally. Season with a pinch of chaat masala.

Keep the vegetables slightly firm rather than cooking them until completely soft.

Step 3: Prepare the slaw

Combine the shredded cabbage, grated carrot, moong sprouts and lemon juice in a small bowl. Toss well so the lemon juice coats the vegetables evenly.

Step 4: Warm the wraps

Place each whole wheat wrap or roti on a dry pan and warm briefly on both sides. Keep it flexible enough to roll without cracking.

Step 5: Assemble the wraps

Spread 1 tablespoon of hummus and 1 tablespoon of green chutney over each wrap. Arrange half the cooked kofta on each one, followed by the sautéed vegetables and fresh slaw.

Add fresh coriander or chilli if desired.

Step 6: Roll and serve

Fold the sides inward and roll each wrap firmly. Slice in half and serve immediately while the kofta and vegetables are warm.

Tips for Better Kofta Wraps

  • Avoid a soggy wrap: Do not add too much chutney or hummus. Keep excess moisture from the vegetables to a minimum.

  • Prepare ahead: Cook the kofta and chop the vegetables in advance. Assemble the wraps shortly before serving.

  • Make party portions: Cut each assembled wrap into smaller pieces and secure them with cocktail picks.

  • Adjust the spice level: Use extra green chilli for heat or additional lemon juice for freshness.

  • Try different greens: Lettuce or baby spinach can replace some of the cabbage, depending on availability.
